Our Story

Founded by J Nickel in 1961, Nickel’s Bakery has been a staple in the neighborhood bringing the smell of fresh bread for decades. The stone covered gas fired oven was imported from Europe and the bakery built around it. After 35 years, at the age of 76, Nickel retired and sold the Bakery.

Meanwhile in Poland, Kazimierz Kwasniewski began his apprenticeship as a Baker at the age of 16 and a few years later successfully opened his first Bakery, with his wife Iwona, under the communist regime’s tight control. The whole family packed up roots and immigrated across the ocean to a new life in Canada several years later through a complex and risky process via Germany in 1989. After many months of hard work Kazimierz and Iwona opened “Polish Bakery” in our new home of Edmonton near a Polish community hall and church. The Bakery grew successfully for 7 years and became a staple of the neighborhood along with other polish owned businesses in the area. After many hard winters and longing for a warmer climate, the family fell in love with Vancouver and picked up roots and moved once more. In 1996 Kazimierz purchased Nickels Bakery from a retiring Nickel. In his honour, for many decades of hard work and devotion to his community, we have kept the name as he originally founded it.

Since then, Nickel’s Bakery has expanded its offerings to include many new German, Polish and Eastern European staples as well as added delivery to a variety of European deli’s and stores throughout the lower mainland. We strive to make all our food as it was traditionally made without any artificial preservatives and is best enjoyed fresh, especially the bread. We hope you enjoy the results of many years of hard work, waking up at 1am and honing the skills required to make good food.
